Precious Hengshan Mountain Mushrooms from Beyond the Pass

  The mountainous areas south of Hunyuan are rich in forests and grasses, producing mushrooms locally known as "Hengmo." These mushrooms are highly nutritious and considered one of the delicacies of Hengshan Mountain. They are rich in protein, polysaccharides, vitamins, nucleotides, unsaturated fatty acids, and trace elements such as selenium. They are characterized by tender meat, thick fruiting bodies, and a rich aroma. They can be used in soups, stir-fries, stews, and gravies. Wu Rui's Yuan Dynasty work, "Riyong Bencao," describes Hengshan Mountain mushrooms as follows: "Shaped like large pine blossoms, fragrant like mats, white in color, and delicious to eat." They were selected as a court dish during the Northern Wei Dynasty and are a famous traditional specialty of the Sanjin region.
